Stabilization of cashew apple juice with chitosan: clarification and microbiological quality

Abstract

Cashew apple processing could provide a solution to post-harvest losses in cashew production areas. This study aims to add value to the cashew fruit processing chain to improve producers’ incomes. The cashew apples were harvested in February 2023 and their juices produced stabilized using chitosan at different concentrations (0%, 0.3%, 0.5% and 1%) then stored at room temperature for 16 days. The physicochemical, phytochemical, and microbiological parameters of the juices were determined using reference methods. The results show an acidic pH for both stabilized (4.56 to 4.66) and unstabilized (4.65 to 4.92) juices. Titratable acidity ranged from 27.46 to 71.66 mg H+ eq/100 g. Brix values ranged from 6.00 to 12.00, but no variation was observed for dry matter content. Vitamin C levels ranged from 19.80 mg/mL to 53.46 mg/mL. Phytochemically, total polyphenols were measured between 127.83 and 331.68 mg GAE/100 mL, and tannins between 26.34 and 81.53 ± 1.50 mg EAT/100 mL. Microbiological analysis revealed a total inhibition of mesophilic aerobic germs (134.104 at 0 CFU/mL), fungi (96.104 at 0 CFU/mL) and coliforms (9.104 at 0 CFU/mL) initially present in the juices without chitosan; whereas an increase in their number was observed in the control juices. Chitosan thus appears to be an effective agent for stabilizing and preserving cashew apple juice at room temperature for more than two weeks.
